This 20-minute spaghettini skips the usual Alfredo or tomato sauce and uses a light sauce made with white wine, garlic, onion and vegetable broth.
Yes, vegetable broth on pasta. Trust me.

Prep / Cook (60%)
The most time consuming ingredient to prep was the baby broccoli. I peeled the stems but they were so tender that I don’t believe it was completely necessary.
Clean Up (30%)
Could you use one pot? Yes.
I used two. One for pasta. One for sauce. An easy clean-up either way.
Chance of Grocery Run (90%)
Baby broccoli isn’t an ingredient I typically have in the fridge. I had to make a grocery trip for it so I’m guessing you will too.
Chance of a Fail (15%)
This summer pasta is basically fail-proof. The only reason I consider there to be a 15% chance of a fail is because I reduced the wine too much. It was mostly because I was filming at the same time…but it could happen.

Kitchen Notes & Recipe: Spaghettini with Baby Broccoli EP:105

Notes
✅ Spaghettini is a thin variety of Italian pasta that is narrower than standard spaghetti but thicker than angel hair (capellini).
✅ Portable induction cooker saved me time bringing pasta water to a boil.
✅ No need to mince garlic. Simply peel and slice thin.
⚠️ Wine reduces quickly. Only reduce by half.
✅ Two out of three family members openly gave me props for the flavour.
Recipe

What I Used
Spaghettini– 8 oz / 227 g
Olive Oil – 2 tsps.
White Onion – 1/3 cup, diced
Garlic – 1 clove, peeled and sliced
White Wine – 1/3 cup
Baby Broccoli – 1 bunch, chopped
Vegetable Broth – 1 cup
Parmesan Cheese – grated (about 2 Tbsp.)
Red Pepper Flakes – pinch or two
Cook Spaghettini: Cook according to package directions. Save about 1/2 cup of cooking water before draining. Drain and set aside.
In a deep skillet with lid: Heat oil over medium-low heat. Add onions and garlic. Cook until onions begin to soften about 3 minutes. Add white wine. Reduce by half. Add baby broccoli and vegetable broth. Cover with lid and simmer until baby broccoli is tender, about 3 to 4 minutes. Remove from heat.
The Finish: Top with cheese and red pepper flakes. Cover with lid until cheese is melted on top.
Verdict
Should I Cook It?
Cook It If: There’s extra white wine in the fridge and you’d rather not top pasta with a heavy cream or tomato sauce.
Skip It If: You don’t want to open a bottle of white wine to make it.
