My wife makes a holiday version of this salad (that’s legendary) but it requires a Level 5 threshold to make. It’s a commitment. This scaled down Level 3 Version for weeknight cooking is half the effort. No bacon in this one, but it still has that holiday version flavor. Here’s how I made it. ⬇️
Holiday Broccoli Salad For One: EP#55
Ingredients
- 1 head of broccoli, cut into bite-sized pieces (about 2 cups)
- ½ cup red seedless grapes, sliced into quarters
- 1 spring onion, chopped
- 1/3 cup light mayonnaise
- 2 tablespoons sugar
- 1 tablespoon white vinegar
- Pinch of salt
Steps
- In a bowl, toss together broccoli, grapes and spring onions. In a separate bowl, whisk together mayonnaise, sugar, vinegar and salt. Pour dressing over broccoli mixture and toss. Enjoy!

Recipe Notes:
- Chop The Broc Small → Big broccoli florets aren’t as appetizing to eat.
- Why Red Grapes? → Because they’re slightly bitter. It works well with the sweet dressing.
- White Vinegar or White Wine Vinegar? → White vinegar. As in the budget-friendly stuff.
- Why Cook It? → This is a sweet-tasting healthy snack to have waiting in the fridge and is so incredibly easy to make.
