Marry Me Orzo: EP#54
Ingredients
- 1 tablespoon olive oil
- 1 teaspoon butter
- ½ onion, chopped
- 1 cup orzo pasta
- 2 tablespoons tomato paste
- 3 cups broth (chicken or vegetable)
- Pinch of salt
- Pinch of thyme
- 2 tablespoons heavy cream
- 2 tablespoons grated parmesan cheese
Steps
- Heat oil in a large skillet over medium heat. Add butter. When butter melts, add onion. Cook and stir onion until it softens. Stir in orzo and tomato paste. Cook for a minute to slightly toast the orzo. Pour in broth. Add salt and thyme. Cook for 15 minutes or until orzo absorbs almost all the broth. Stir every so often to keep the orzo from sticking to the pan. Before serving, stir in cream and fold in parmesan.

Recipe Notes:
- Get Creative → This dish is very versatile. Next time I’ll add chicken.
- No Broth? → Me neither. I used a chicken bouillon cube. Whisked it into three cups of hot water.
- Cream Optional → But it does add a nice texture.
- Will I Make It Again? → When it’s this easy, and this good, why not?!
