Leek Potato and Apple Soup: EP#49
Started by gathering these…⬇️
Ingredients
- 1 leek, trimmed and chopped
- 1 apple, cored peeled and chopped
- 3 large potatoes, peeled and roughly chopped
- 3 cups vegetable broth
- ½ cup coconut milk
- 1 sprig of fresh thyme (optional-ish,→ haven’t made this soup without it )

Thoughts Before I Started Cooking:
- What No Herbs?: Had fresh thyme in the fridge. Decided to include a sprig in the recipe (to take this to 5-ish ingredients).
- Biggest Doubt? Whether to follow the AI advice → “finish soup with the coconut milk leftover from the first meal (EP #48).“
Despite my doubts I decided to go for it…⬇️
Steps
- Melt a tablespoon of butter in a soup pot over medium heat. Add leeks. Season with salt and pepper. Cook and stir until leeks soften, about a 2 minutes. Add apples, potatoes, and vegetable broth. If you have a sprig of fresh thyme, toss it in the pot and stir into the mix. Cover and simmer for about 20 minutes or until potatoes are tender.
- Remove sprig of thyme from pot. Blend soup until smooth. Stir in coconut milk (spoiler alert: you’ll be happy you did). Season again (if you like) to taste. Serve with fresh thyme leaves on top.

Thoughts After Tasting:
- “Damn That’s Good!” → Wondered if my wife and kids would like it as well.
- Wife and Kids Tasted It → then asked how I made it (that’s when you know it’s good.)
- The Secret Ingredient → I cheated and tasted this before adding the coconut milk. It tastes much better, and has a smoother texture, with the coconut milk.
- What About the Thyme? → One sprig of fresh thyme did the trick. If I were use dried thyme I’d only add about a ¼ teaspoon.
- Will I Make Again? → Oh yeah…this soup’s a winner!
