Decided to test AI to see what kind of meal plan it would make for me – based on the ingredients I had on hand.
What did it spit out? The Harvest Kitchen Week Meal Plan.
First on the list was general guidelines for: ⬇️
Butternut Squash and Apple Coconut Curry
With the help of The Cook-a-Palooza Experience Cookbook’s Apple Curry Chicken Recipe, here are the ingredients I used, and the steps I followed.
Ingredients
- 1 butternut squash, peeled and chopped
- 1 apple, cored peeled and chopped
- ½ onion, diced
- 1 clove garlic, minced
- 1 tbsp. brown sugar
- 2 tsp. curry powder
- ¼ tsp. cinnamon
- ½ tbsp. grated ginger
- 1 cup vegetable broth
- 1 cup coconut milk
- 1 tsp mustard (preferably the grainy kind)
- salt and pepper
- ½ cup chickpeas
- ½ cup cranberry raisins
- 1 tbsp. chopped cilantro
Steps
Heat a teaspoon of cooking oil in a large deep skillet over medium heat. Sauté apples with onions until soft. Add garlic, brown sugar, curry powder, cinnamon and ginger. Stir for 1 minute. Add vegetable broth, coconut milk, and mustard. Season with salt and pepper. Add squash. Cover and simmer for 20 minutes – or until squash is tender.
Transfer a third of the squash curry mixture from the skillet to a blender. Blend until smooth. Stir blended squash back into the skillet. Stir in chickpeas, cranberry raisins and cilantro. Serve as is or over rice.


The Verdict: ⬇️
With a little finesse, this one-pot AI recipe turned out shockingly good.😱
I’d make it again.
Mostly so I can use the apple corer one more time. Love that tool!
